Rotolo di Faraona

Rotolo di Faraona or Roast of Guinea Fowl is an amazingly easy dish to make. . . 

I had a very busy day yesterday full of appointments and traveling. When I finally arrived home I was exhausted and hungry. 

Earlier in the morning, I had stopped at my favorite "macelleria" ( butcher)  and bought the Roast of Guinea Fowl.. I am so happy I did.. As I was far too tired to stand in front of the stove cooking a nice dinner for the two of us. 

The roast turned out amazing. So simple to make too. 

Here are some photos down below of the simple process : 

 I used a tin foil roasting pan because I wanted not only an easy meal, but an easy clean up ~

 After 2 hours it is finished ~ 
Marco, made the roasted potatoes ~ 

The roast is also wrapped with pancetta ( bacon ) 

 Dinner is served ~ Roasted Faraona, Onions, Carrots, and Potatoes :) 

Simple and delicious and made a great left over too!
