Pasta, Pasta and more Pasta

Hello everyone!!! 

Tonight, when I walked in the door, I came home to this beautiful and delicious pasta dish that Marco made for us. 

Marco has many talents that I wish I had. He is able to use whatever ingredients we have in the refrigerator and invent a new dish. 

An idea POPPED in my head.. Why doesn't he write a Pasta cookbook.. Italian Pasta dishes..50 Pasta dishes.. Italian... Not Italian American or American Italian, but "solo" Italian.. Still working on the name of course.. 

And of course simple to make.. and photos are a must :) 

Let me know what you all think about that.. 


After he washed and chopped the tomatoes and eggplant he sautéd with olive oil, garlic, rosemary and sage. 

After the pasta is cooked and drained add the veggies and mix.. 

Yes, its that simple :)
